Pasta Diablo Serves 2 1/2 lb spaghetti or linguine 1/2 c best virgin olive oil 4 cloves garlic, peeled and chopped 4-6 Tbsp. red pepper flakes or to taste Salt to taste Fresh grated Parmesan or Romano Cook pasta in boiling water until al dente or to your liking. Drain and reserve. Meanwhile heat the olive oil in a small skillet until hot. Toss in the garlic and cook, stirring constantly until light brown (about 2 minutes). Do not burn the garlic! Remove from heat, add the pepper flakes and toss over the pasta. Serve with Chianti or good Dago Red. Printable version: pasta-diablo.txt.
