Pappardelle in Turkey Sauce Serves 4 8.8 oz pkg pappardelle noodles 8 oz ground turkey 2 oz finely diced ham 3 oz diced mushrooms 6 oz tomato sauce 1 tablespoon flour 4 tablespooons red wine 4 tablespoons light cream 3/4 cup grated parmesan 1 tablespoon olive oil 2 tablespoons cognac 1 carrot, diced 1 small onion, diced 1/2 leek, diced 1 small celery stalk, diced 1 bay leave butter salt pepper Heat oil over medium-high heat. lightly brown turkey. Add diced ham and mushrooms. Sprinkle with cognac and stir till it cooks out. Add bay, carrot, onion, leek and celery. Pour in wine. Lower heat and simmer for 40 to 50 minutes. Remove bay leaf. Season to taste. Stir in cream, then remove from heat. Cook and drain pappardelle. Add sauce, sprinkle with parmesan. Printable version: pappardell03.txt.
