Orzo Primavera 1 c orzo 1 tsp salt 1c frozen baby peas, thawed 1 sm red bell pepper, seeded and diced 1 tablespoon chopped fresh dill 1-2 tablespoons fresh lemon juice 1 tsp olive oil salt & fresh ground black pepper Bring a large pot of water to a rolling boil. Stir in orzo and salt and return to a boil. Cook, stirring occasionally to keep the orzo from sticking, for 6-10 mins, or till the grains are tender but firm . Drain and transfer to a serving bowl. Add peas, red pepper, dill 1 Tb lemon juice and olive oil. Mix well, tasste and adjust seasonings, adding more lemon juice, if desired. Season with salt and pepper and serve hot.
