ASPARAGUS PASTA 1 bunch asparagus 1/4 c. butter 3 scallions, finely chopped 3-4 fresh mint or basil leaves, finely chopped 2/3 c. heavy cream 1/2 c. grated Parmesan salt pepper Steam the asparagus for a few minutes till brilliant green and somewhat tender. Meanwhile, melt the butter in a frying pan and fry the scallions and herbs for a few minutes. Stir in the cream and then the asparagus, heating gently. Season. Printable version: asparagus01.txt.
