CHEESE AND SPINACH LASAGNE 500g (1 lb) spinach 2 cloves garlic salt and pepper to taste 250g (1/2 lb) cottage cheese 1 cup grated mozzarella cheese 1/2 cup grated parmesan cheese 250g (1/2 lb) low fat sour cream 400g (13 oz) egg lasagne Wash spinach and cook until just soft. Drain well, squeezing out as much water as possible. Chop finely. Crush, peel and finely chop garlic. Mix garlic, spinach, salt and pepper. In another bowl, mix mozzarella, parmesan and cottage cheeses and sour cream together. Grease the lasagne dish, cut a sheet of lasagne to fit the dish. Spread with a layer of spinach, followed with a layer of cheese mixture. Repeat layers until all ingredients are used, finishing with the cheese mixture. Bake at 180 C (350 F) for 20 - 25 minutes, or until pasta is tender. Serves 4. Printable version: o-l-cheese-spinach.txt.
