Lasagna Serving Size : 18 1/2 pound ground beef, extra lean 1/2 pound Italian sausage 1 tablespoon olive oil 2 cloves garlic, pressed 1 large onion, chopped 28 ounces crushed Italian tomatoes 6 ounces tomato paste 1 teaspoon dried basil 1/2 teaspoon dried oregano 1/4 teaspoon pepper 2 medium bay leaves 2 dashes tabasco sauce 12 lasagna noodles, uncooked 1 pound part skim milk mozzarella cheese, (4 cups) 32 ounces cottage cheese, creamed 1/2 cup shredded Parmesan cheese Brown ground beef and sausage. Drain. Heat olive oil in large sauce pan. Add garlic and onions and saute over medium-low heat until onions are translucent. Add meat, tomatoes, tomato paste, basil, oregano, pepper, bay leaves, and tabasco to the sauteed garlic and onion. Simmer one hour. Remove bay leaves. Layer in 9 x 13-inch pan, coated on bottom with a small amount of sauce, as follows: 4 noodles 1/3 of sauce 1/3 of mozzarella cheese (1-1/3 cups) 1/3 of cottage cheese Repeat layers twice more. Top with parmesan cheese. Bake at 350F for 60-90 minutes, until top is golden brown. Allow to set for 10 minutes before cutting and serving. Printable version: meat08.txt.
