Lasagna Roll-Ups
Serves 6

12 lasagna noodles
2 cups cooked, drained, diced spinach
1/3 cup Parmesan cheese
1 ucp mozzarella cheese
1/2 tsp nutmeg
1 tsp black pepper
3 cups spaghetti sauce

Cook lasagna noodles till al dente.  Refresh in cold water.  Drain
and pat dry.  Set aside.

Mix spinach with Parmesan and mozzarella cheeses.  Season with
nutmeg and pepper.

Spread 3 tablespons of mix on each noodle.  Roll up into 2-inch
rolls.

Add 1 cup sauce to bottom of a 2-quart casserole.  Place lasagna
rolls in 1 layer.  Cover with remaining 2 cups of sauce.

Bake at 350F for 30 minutes.  Serve with crusty garlic bread and
a green salad.
