Oshi Joor-Rawtee (Rice and Mung Beans, Afghani) 1 c mung beans 3 1/2 cups water 1 c rice salt 1 1/2 ts ground cuminseed 1/4 ts pepper Put beans in a pot and cover with water. Simmer for 30 minutes. Skim off skins as they rise to the surface of water and discard. Add rice, salt, cuminseed, and pepper and continue to simmer over low heat for an additional 30 minutes. Do not allow to get too dry.
