Quorma (Meat Stew) 

2 1/2 pounds beef roast, cubed
oil
1 large onion, chopped
2 potatoes, quartered, blanched
4 to 6 cloves garlic, minced 
1 teaspoon minced ginger
1 teaspoon curry powder
1 teaspoon ground coriander
1 teaspoon cinnamon
1 teaspoon turmeric 
4 medium tomatoes, chopped
Salt and pepper 
1 1/2 cups Water

Heat oil in large pot, add onions and saute until golden. Add beef.
Add chopped tomatoes, garlic, ginger, one teaspoon curry powder,
ground coriander, one teaspoon cinnamon, one teaspoon turmeric and
salt. Pour water. Cover the pan until meat is tender, (about 45
min or 20 minutes if cooking in a pressure cooker). Add potatoes,
chick peas and some more water if needed. Cook covered for about
10 minutes (5 min if cooking in a pressure cooker).  It can be
served with rice as a side dish or as a main meal with Afghani
bread.
