Arabian Ashoura 1/2 c. whole wheat kernels (use soft white wheat if you can find it) 1 1/3 c. canned or rich milk 1/2 c. sugar pinch of salt 1 tsp. vanilla a few raisins and chopped almonds Wash the wheat and boil in 2 c. water for 1 hour. Let rest overnight, then simmer the next day until until very soft, adding more water if necessary (2-3 hours total). Add milk and simmer over low heat for 30 minutes. Stir frequently. Add sugar and stir 5 minutes more. Remove from heat, add vanilla, and serve warm in small dishes. Sprinkle each bowl with a few raisins and chopped almonds, or pine nuts. This is an Arab whole wheat pudding that's good for breakfast. Printable version: ashoura.txt.
