4) Claudia 65 weeks ago -- Grilled Tortilla Sandwich 2 large flour tortillas 1/2 cup grated cheddar 2 or 3 oz. crumbled soft mild goat cheese (montrachet) 1/4 cup your favorite salsa or tomato sauce 1/2 chopped onion 1/2 cup cooked black beans, slightly mashed olive oil Brush one side of first tortilla and lay (oil side down) on plate. Carefully sprinkle all ingredients over tortilla and cover with second tortilla. Brush olive oil on top. Place tortilla sandwich on hot grill for 2-3 minutes (until cheese starts to melt and grill markes appear on bottom. Using two spatulas (and maybe the help of a second person) lift the tortilla and slide it back onto plate in preparation for flipping. Turn plate and slide it back on the grill for another minute. Close cover if necessary. Remove from grill, let cool slightly and cut into triangles using kitchen scissors. Serve with sour cream and dijon mustard for dipping.
