Chiles Con Papas Serves 6 1 tablespoon vegetable oil 2 medium onions, chopped 2 fresh green Hatch chiles 4 large potatoes, peeled and diced boiling water salt to taste Saute onions until tender. Add green chiles. Add diced potatoes. Mix thoroughly. Add boiling water to cover, cook down until potatoes are tender and creamy. Add salt to taste. Cooked potatoes may be used in place of the raw potatoes, but only add a small amount of water to the mixture. Printable version: chiles-con-papas.txt.
