Bean and Cheese Tacos 8 oz. can kidney beans, drained 1 clove garlic, finely chopped 4 8-inch flour tortillas 1 cup ricotta cheese 1/4 cup grated Parmesan cheese 1/4 cup chopped green onions 1 teaspoon cilantro leaves Heat oven to 350 degrees. Mash beans and garlic. Place tortillas on ungreased cookie sheet. Spread about 1/4 cup of the bean mixture on half of each tortilla to within 1/2 inch of edge. Mix cheeses, onions, and cilantro; spread over beans. Fold tortillas over filling. Bake about 10 minutes or until tortillas begin to brown and filling is hot. Printable version: bean-tacos.txt.
