Porcupine Meat Balls Serves 4 750g (1 1/2 lb) finely ground beef or lamb 1 small onion, finely chopped 1 egg 1/3 cup raw rice 1 tablespoon chopped parsley 1/2 teaspoon salt freshly ground black pepper 1 small onion, finely chopped 1 clove garlic, crushed 2 tablespoon finely chopped celery 1 large tin tomato soup 1 cup beef stock salt and pepper to taste Gently fry onion garlic and celery in a deep saucepan until onion is soft. Add remaining ingredients, cover and simmer gently for 10 mins while preparing meat balls. Combine meatball ingredients. Shape into balls the size of a walnut. Drop in to prepared sauce, cover and simmer gently for 30-40 mins. Printable version: porcupine08.txt.
