Roasted Game Hens with Thyme Serves 4 1 1/2 pounds mixed red and green seedless grapes 8 shallots 6 sprigs thyme 2 tablespoons olive oil salt and freshly ground black pepper 4 Cornish game hens (1 to 1 1/4 pounds each) Preheat oven to 450F. In a shallow baking pan, toss grapes and shallots with thyme sprigs, oil, 1 teaspoon salt and 1/4 teaspoon pepper. Tie hen legs with thread, and set among grapes on baking sheet breast side up. Season with salt and pepper, sprinkle with additional thyme leaves. Roast, basting occasionally with pan juices until an thermometer inserted in thickest part of leg reads 160F, 30 to 35 minutes.
