Roasted Rock Cornish Game Hens 
Ingredients per game hen ( Marinade )                                

juice of 1/2 lemon 
1/4 cup  extra virgin olive oil 
1 large garlic clove, pressed 
1/4 cup fresh chopped thyme 
1/4 cup fresh chopped rosemary 
freshly ground multicolored peppercorns to taste 
1/4 tsp anise
1 bay leaf 
1/2 to 1 teaspoon crushed red pepper 
salt 
Game hen 
melted butter 

1 tsp cooked wild rice 
4 Tbsp Italian style bread crumbs
1/2 tsp finely chopped celery
1/2 tsp finely chopped green pepper
1/2 tsp finely chopped red onion
4 Tbsp Spicy V-8 Juice 

Split the hens and remove the ribs and backbone. For The marinade
Combine all above except butter and marinate the hens for 2 to 6
hours.  Bring them to room temperature before cooking. Preheat oven
to 350 degrees. Remove the hens from the marinade and pat more or
less dry.Add stuffing Arrange in an oven dish (single layer), brush
with butter, salt, and peppercorns and bake for 20 to 25 minutes
covered with a foil tent. Uncover and cook at 500 degrees for 10
mins brushing with butter once or twice.
