ROAST CORNISH GAME HENS 

2 Cornish game hens

1/3 cup dry white wine
2 tsp poultry seasoning
2 tsp lemon juice
1 tsp low sodium soy sauce
1/2 tsp ground green or white peppercorns 
2 sprigs fresh parsley

Wash hens and pat dry.  Mix marinade ingredients.  Brush hens inside
and out, reserving the extra marinade for basting.  Refrigerate
hens for 2 hours.  Preheat oven to 400 F.  Place a sprig of parsley
in the cavity of each hen.  Place on roasting rack in shallow pan.
Roast for 15 minutes at 400 F.  Reduce heat to 350 F  and roast
for 1 hour.  Baste with reserved marinade frequently (every 10 -
12 minutes).
