Roast Game Hens 1 game hen 1/4 cup melted butter 1/4 tsp red chilli powder (or ground black pepper) 1/4 tsp salt 1/8 tsp crushed basil leaves Defrost the hen(s) and skin them. Fork the hen(s). Combine salt, pepper, basil leaves and butter. Using a small brush or spoon, spread the mixture over and inside the hen. Preheat oven around 350 degrees. Wrap the bird into foil and put it in the oven. Check after 20 minutes or until cooked well. If cooking more than one bird, you may want to wrap them seperately. Serve with vegetables and rice.
