BAR B-Q PHEASANT pheasant salt barbecue seasoning (Carl's Ol Western) bacon garlic 17 oz. can apricot halves Wash bird, soak in salt water for 20 minutes and pat dry. Sprinkle with "Carl's Ol Western" barbecue seasoning outside and inside cavity. Layer strips of bacon on top of bird, covering completely. Secure with toothpicks. Put 3 whole cloves of garlic inside of cavity. Put apricot halves into cavity. Save the juice. Barbecue for 1 to 1 1/2 hours on middle rack with top and bottom vents open. Pour apricot juice over bird about 15 minutes before it is done. This will give it a glazed look. Use metal bread pans. Printable version: bbq-pheasant.txt.
