Hot Mangoes 1 large tin (700g) mangoes in juice 125g (1/2 cup) honey 1 tblsp butter 3 to 4 teaspoons brown sugar 1/4 teaspoon ground nutmeg 1/4 teaspoon ground cinnamon Juice and rind of a lemon rind of an orange (optional) Drain mangoes and reserve the juice. Add to this half the rind of the lemon and all of the orange rind if you are using it. Add the cinnamon and nutmeg too. Put honey, sugar, butter, all the juice of the lemon and 1/2 the rind in heavy based saucepan. Heat stirring until sugar is dissolved, turn up heat and boil for three to four minutes (the longer you boil it the thicker the sauce will be). Do not burn. Take the saucepan off the heat, add the mango juice (with all the extras) - it will bubble furiously at this point. Put back on a low heat and stir to dissolve any caramel which has formed. Add the mango pieces and poach gently until warmed through only. Adjust the cinnamon and nutmeg content to your own taste. Serve over your favourite icecream with wafers, etc. Other fruits which work wonderfully well with this are canned apricots, peaches and funnily enough, pears. Printable version: spiced-mangoes.txt.
