PEARS DE LUXE

4 firm pears
Juice of 4 fresh lemons
1/2 cup honey
1/2 cup rum
1/4 cup chopped blanched almonds

Cut pears into halves, peel, and core.  Arrange, cut side up, in
baking dish.  Combine lemon juice, honey, and rum; pour over pears.
Bake, uncovered, in preheated moderate oven (350F.) for 1 1/2 hours,
or until pears are tender.  Baste pears every 15 minutes with syrup
in bottom of pan.  Remove from oven and sprinkle with almonds.
Broil under low heat to toast almonds.  Serve warm with sweet or
dairy sour cream, or serve cold with garnish of cottage cheese.
Makes 4 servings.
