TUNA CAKES 1 can tuna, drained 3 cups bread crumbs 2 tbsp lemon or lime juice 1 tsp cayenne pepper 1 tbsp mayonnaise 4 tbsp sweet pickle relish parsley, chopped 1 onion, chopped 2 eggs 2 stalks celery, chopped fine Mix ingredients until they hold together, but not too dry or too mushy. If too dry add a little water by the Tablespoon until the desired consistency is achieved. If too moist add more bread crumbs. Fry until golden. Goes well with french fries and cocktail sauce.
