Low-Fat Fish Au Gratin 3 pounds white fish fillets 1/2 cup fat free chicken broth 1 Tablespoon fat free butter 3 Tablespoons flour 1/2 teaspoon dry mustard 1/4 teaspoon nutmeg 1 1/4 cups lite evaporated milk 1 1/2 teaspoons lemon juice 1 cup fat free shredded American cheese Rinse fish and set aside. In nonstick skillet over high heat, combine broth and butter. Add flour, mustard and nutmeg, stirring to mix. Gradually add milk; stirring constantly until sauce thickens. Add lemon juice and cheese. Stir until cheese is melted. Place fish into slow cooker. Pour sauce over fish, cover and cook on medium high for 2 hours or until fish flakes. Serve hot. Makes 6 servings.
