Catfish Parmesan 1/4 cup butter or margarine, melted 1/4 cup Parmesan cheese 1/2 cup dry bread crumbs 2 Tbsp minced fresh parsley 1 tsp. salt 1/2 tsp. paprika 1/4 tsp. oregano 1/4 tsp. dried basil 1/4 tsp. pepper 1 lb. catfish filets Place butter in a shallow dish. In another shallow dish, combine bread crumbs, Parmesan cheese and seasonings. Dip filets in butter, then coat with crumb mixture. Place in a greased 15 x 10 x 1 inch baking pan. Bake, uncovered, at 350 degrees for 20 minutes or until fish flakes easily with a fork. Printable version: catfish-parmesan.txt.
