Norwegian Liver Loaf Serves 6 1 1/2 lb calf or beef liver 1/4 lb salt pork 2 anchovy fillets 3 beaten eggs 2 tb milk 1 cup bread crumbs 2 tb grated onion 2 tsp salt 1/2 tsp pepper Wash the liver carefully, removing membranes. Grind it 3 times with the salt pork and anchovies. Place in a bowl and add everything else. Mix until very smooth. Preheat oven to 350 F. Butter a 9-inch loaf pan and pour the mixture in. Place the pan into a bain-marie (another pan filled with hot water). Bake for 1 1/2 hours. Let cool to room temp, then chill. Cut into 1/2 inch slices and serve cold as an appetizer with thin slices of buttered rye or pumpernickel bread. Printable version: liver-loaf.txt.
