FISH SPREAD 1 kg topfen / quark / fromage frais 3-4 medium onions 250 ml sour cream 1 glass pickles / gherkins some capers 2 small cans anchovies 2 cans tuna in vegetable oil 3-4 cans sardines (spicy ones) in vegetable oil some salt some milk if necessary Put the topfen and sour cream in a big bowl and add the finely chopped pickles capers and onions. Open the fish cans. Do not drain the oils yet. Cut the anchovies into small pieces and add them, together with the other fish to the topfen. Add a good bit of the oil (expecially from anchovies and sardines) and mix well. Add some salt and if it is too thick to spread a bit of milk to make it creamy.
