Chopped Liver 1 onion l lb liver 2 eggs 1 - 2 tbs. chicken fat salt to taste Cook the onions in a frying pan. Remove the onions from the pan, but do not clean the pan. Cook the liver in the same pan. Hard boil two eggs. Let everything cool in the fridge for about 24 hours. (You want both the onions and liver to be completely cooled. In a food processor mix together the liver, onions, and eggs. Finally mix in the chicken fat and salt to taste. You can either make chicken fat or buy it in a store. To make chicken fat: cook a chicken on a rack in a pan. Then take all the drippings from the chicken and place then in a small container to cool in the fridge. After its has cooled, the fat will rise to the top and harden. That is the chicken fat that you want to use. If you do not want all of the cholesterol, you can substitue mayonaise. But I personally do not like the taste of it with mayonsaise.
