Black Bean Dip 2 cups washed/cleaned black beans 6 cups water or more 1 medium onion, chopped 1 Tbsp minced or granulated garlic 2 Tbsp salt 2 cups cooked black beans 1 jalapeno chile, minced 1 small chopped onion 1 Tbsp fresh chopped garlic 1 C sour cream (or use yogurt) 1 tsp cumin salt pepper to taste Put beans, water, onion, garlic and salt in a suitable pot. Bring to boil, then reduce heat to low and simmer 2-3 hours, or until tender. Add more water if needed, and skim foam off the top. (Note: this will make about 6-7 cups cooked beans). Puree 2 cups beans in a blender or food processor. Add chile, onion, garlic, sour cream, cumin, salt and pepper, puree until smooth. Chill before serving. Printable version: black-bean-dip01.txt.
