Strawberry Souffle

3 cups fresh strawberries
1/4 cup sugar
6 egg whites
1/4 cup sugar
Custard or cream sauce to accompany
Mint leaves to garnish

Make a puree with the berries and sugar in the food processor. Make
a meringue by beating egg whites with sugar until stiff but not
dry. Gently combine whites into puree.  

Fill a small souffle dish or casserole dish with mixture.  Flatten
top with spatula  Bake on lower oven shelf, in a preheated 400F
oven 8 to 15 minutes or just getting browned around edges Serve
immediately with a cream or custard sauce on the side.
