Gratinee of Mixed Berries with a Sabayon 125 g/ 4 oz each raspberries, strawberries, blueberries, blackberries 4 egg yolks 4 T. sugar 200 ml/ 6 1/2 fl. oz. demi-sec sparkling wine (Domaine Chanodon cuvee riche where available) Mix berries in a large bowl and divide between 4 serving plates. In a copper bowl mix yolks, sugar and wine. Place bowl directly over low heat and whisk until soft peaks form, mixture holds its own shape and there is no liquid left at the bottom of the bowl. If you don't have a copper bowl, do this in a stainless steel bowl set over a saucepan of simmering water, making sure that the water does not come into contact with the bowl. Spoon sabayon mixture over the berries and toast the top to a golden brown color under a very hot grill, Serve immediately. Printable version: sabayon02.txt.
