MANGO MERINGUE FOOL 1 large ripe mango 125 g carton low fat soft cheese 25 g / 1 oz icing sugar 4 meringue nests 200 ml carton half-fat crhme franche Skin and stone the mango. Cut eight thin slices and reserve, then whizz the rest in a food processor until smooth. In a bowl, beat the cheese and sugar, then gradually beat in the mango puree. Crumble the meringue, then layer up with the mango fool and crhme franche in glass tumblers. Decorate with mango slices and chill until ready to serve. serves 4 Printable version: mango-fool.txt.
