Lemon Sponge Pudding

3/4 cup white sugar
1 1/2 tbsp. butter
3 egg yolks
3 tbsp. flour
1/2 tsp. salt
1 lemon, rind and juice
1 1/2 cups milk
3 egg whites, beaten stiff
 
Blend sugar, butter and yolks together.  Beat well.  Add salt,
flour and milk with lemon juice and grated rind.  Fold in egg
whites.  Pour into greased baking dish.  Set in pan of hot water
and bake for 40 minutes at 350 degrees.

Serve either hot or cold.
