Guamanian Coconut Pudding

1 cup masa harina (corn flour)
1 cup cornstarch
1 cup sugar
3 cup canned coconut milk
1 tsp vanilla extract
4 cup boiling water

Combine first five ingredients. Mix until lumps have disappeared.
Pour in boiling water. Cook over low heat, stirring constantly
until thickened.  Pour in pan. Cool. Cut and serve. Pudding may be
refrigerated before serving.
