Ginger Pudding Serves 6 1/4 cup shortening 1/4 cup brown sugar 1 egg, well beaten 1/2 cup sour milk 1/2 cup molasses 1 teaspoon ginger 1 1/2 cups flour 1/2 teaspoon soda 1 teaspoon baking powder 1/2 teaspoon cinnamon 1/2 teaspoon salt Mix and bake or steam like a cottage pudding, sifting the spices with the flour. Combine sour milk and molasses add alternately with flour and spices. Turn into a greased cake pan bake in a 350F oven for 45 minutes or pour into greased individual molds and steam for 1 hour. Note: In the cottage pudding recipes the shortening and the sugar are creamed then the egg is added. The flour, spices and baking powder/soda are combined and the flour mixture is added alternately to the creamed mixture and the milk mixture. Note: In all the recipes given the amount of baking powder indicated is correct when using either tartrate or phosphate baking powder. With aluminum baking powder use 1/2 the amount specified.
