CHOCOLATE BANANA CREAM 1 Tbs gelatine 1/4 cup cocoa 1/4 cup sugar 1/4 tsp salt 2 egg yolks 16oz (2 cups) milk 1 tsp vanilla 2 egg whites 1/4 cup sugar 1/2 cup mashed bananas Combine gelatine, cocoa, first 1/4 cup sugar and salt in the top of a double boiler. Beat together egg yolks and milk and add to cocoa mixture. Cook over hot water stirring constantly, until gelatine is dissolved and mixture begins to thicken a little. Remove from heat, add vanilla, and chill the mixture until it is just beginning to set. Beat egg whites until stiff, then beat in second 1/4 cup of sugar. Fold in cocoa mixture and mashed bananas.
