BUTTERSCOTCH AND APPLE PUDDING 1 cup flour 2 tsp baking powder 1/4 to 1/2 teaspoon nutmeg or ginger 1/2 teaspoon salt 2 to 3 cooking apples, diced 1/2 cup milk 1 cup brown sugar 2 tablespoons butter 1/2 teaspoon cinnamon 2 cups water Sift flour, baking powder, spice and salt into a mixing bowl. Peel and core the apples, cut into 3/4 inch cubes and toss them in the flour mixture. Add the milk and mix with a knife to blend all ingredients. Spread the mixture into a greased tin about 9 inches square. Place the topping ingredients into a saucepan and bring to the boil. Pour the boiling mixture carefully over the batter in the pan. Bake uncovered 390 F 45 60 minutes, until the crust is firm in the centre and golden brown. Ass the pudding bakes a butterscotch sauce form under the apple-studded crust.
