Blaberjagrautur - Icelandic Blueberry Pudding 1 litre blueberries 1 liter water 1/3 cup sugar 1/3 cup potato flour 1/3 cup cold water Wash the blueberries and cook in the water and sugar until soft. Take the pot off the stove, add potato flour and water mixture until desired thickness is reached. Let boil again for a few seconds. Sprinkle lightly with sugar to prevent crusting. Serve warm or cold with cream or cereal cream. Printable version: blueberry04.txt.
