  STEAMED APPLE-PRUNE PUDDING

3/4 cup soft butter or margarine
1/2 cup finely packed light brown sugar
1/4 cup molasses
4 eggs, separated
1 cup unsifted all-purpose flour
1/2 teaspoon each of salt and baking soda
1/2 teaspoon each of ground nutmeg, cinnamon, cloves, and allspice
1 cup chopped uncooked prunes
1 cup chopped peeled tart apple
1/4 cup diced citron
Hard sauce

Cream butter and sugar until light and fluffy; beat in molasses.
Add egg yolks, one at a time, beating after each addition.  Add
sifted dry ingredients.  Stir in fruits.  Then fold in stiffly
beaten egg whites.  Pack in greased 1 1/2-quart pudding mold.
Cover and steam for 3 hours, or until done.  Serve warm with hard
sauce.  Makes 8 to 10 servings.
