Overnight Ricotta Cheesecake
1 lb cream cheese
1 lb ricotta cheese
1 1/2 cups sugar
6 eggs
2 tablespoons lemon juice
1 teaspoon vanilla
3 teaspoons cornstarch
3 tablespoons flour
1/4 lb melted butter
1 pint sour cream
Cream cream cheese, ricotta cheese and sugar together and set aside.
In a blender combine eggs, lemon juice, vanilla, cornstarch, flour
and butter until well blended. Slowly add cream cheese mixture to
blender and mix. In a bowl add 1 pint sour cream to everything
from blender.
Bake at 325 degrees in greased and floured springform pan for one
hour.
Turn oven off and leave in for at least 2 hours. Cool completely
before cutting.
Can make cake at night and leave in oven until morning.
