Crustless Cheesecake 60 ml graham cracker crumbs 500g cream cheese 1/2 cup sugar 4 extra large egg yolks 2 tbsp cake flour salt 1 ts vanilla essence 1 cup thick cream 4 extra large egg whites 4 tbsp castor sugar Use 45 ml crumbs to coat the inside of a well buttered deep 25 cm springform tin. Shake out loose crumbs. Beat together cream cheese, egg yolks, flour, salt and vanilla essence.Beat in the cream.Whisk egg whites till stiff, then beat in castor sugar to make a meringue. Fold into cream cheese mixture.Tip into springform tin. Sprinkle remaining crumbs over the top and bake at 160 deg Celsius for one hour. Turn off oven. Open the door for 15 minutes, then close the door and leave for 45 minutes. Cool and refrigerate. Turn out of Springform tin and decorate with whipped cream. Printable version: crustless02.txt.
