White Chili 1 lb. great northern beans 2 cloves garlic 1 large onion, chopped 1/8 tsp. white pepper 1 tsp. cumin 1/2 tsp. oregano 1/2 tsp. marjoram 3/4 cup diced, cooked chicken or turkey 4-oz. can green chilies 1/8 tsp. crushed red pepper 1 Tbs. fresh cilantro 8 cups chicken broth Presoak beans overnight or at least 4 hours. Drain. Simmer beans in chicken broth with onion, garlic and seasonings. Simmer 1 hour. Add green chilies and chicken; simmer another hour until beans are tender. To serve, put out small bowls of tortilla chips, sliced jalapeno peppers, Monterrey Jack cheese, ripe olives, salsa and/or sour cream.
