THAI BEEF CASSEROLE
 
2 tsp oil
500g stewing steak
1 large onion, chopped
2 tsp grated root ginger
1 tsp minced chilli
1 tsp garam masala
1 pkt oxtail soup powder
1 3/4 cups water
3/4 cup coconut milk powder
 
Heat the oil in a frying pan, then brown the beef over a high heat.
Place on casserole dish.  Add onion, ginger and chilli to the pan,
cook 3 - 4 minutes.

Combine garam masala, soup mix, water and coconut milk powder.
Add to the onion mixture.  Bring to the boil, stirring constantly,
then pour over the beef.  Cover the casserole.  Cook at 160 - 170
C, for 1 1/2 hours or until beef is tender.  Serve with rice.
