Southwestern Sausage Supper 1 lb sausage 1 cup shredded cheddar cheese 1 medium onion, chopped 1 pkg (8 1/2 oz) corn muffin mix prepared according to directions 8 oz canned tomato sauce 1 pkg taco seasoning mix 1 cup whole kernel corn 2 tbsp water 2 jalapeno peppers, chopped 15 oz canned black beans, drained sour cream green onions, thinly sliced Preheat oven to 350. Brown and crumble sausage in large skillet. Add onions and cook until transparent. Stir in tomato sauce, water and all but 1 teaspoon of the taco seasoning. Simmer to blend. Remove from heat and add black beans. Pour mixture into greased 9x13 glass baking dish. Sprinkle with 3/4 cup shredded cheese. Prepare corn muffin mix according to package. Combine corn and jalapenos with mix and spread over top of sausage mixture. Sprinkle with 1/4 cup cheese and 1 teaspoon taco seasoning. Bake 30 minutes until lightly browned and cornbread is set. Cut into squares. Garnish with sour cream and green onions. Serves 8. Refrigerate leftovers. Printable version: southwest-sausage.txt.
