Purslane Casserole

1 onion, chopped
chopped garlic, optional
1 pound ground beef
1 handful purslane, washed well
8 oz can tomato sauce
1/2 cup rice
salt
pepper

Saute chopped onions in vegetable oil.  Add ground beef and cook
until the meat is completely browned.  Add washed and chopped
purslane.  Add tomato sauce or chopped fresh tomatoes.  Add about
1/2 cup of rice to a pot of this dish and add some water and let
it simmer.  Salt and pepper to taste. You can serve this dish hot
as is or if desired with a whipped yogurt sauce.
