Purple Stew 3-4 purple potatoes, cut into chunks 1 red cabbage, sliced 1 beet, cubed 1 c turtle beans, cooked 1 t mint, finely chopped 1/2 t thyme, finely chopped 1/2 t oregano, finely chopped juice from 1 lemon Combine everything except lemon juice in pot and cover with water. Simmer, covered, until the beets and potatoes are cooked. Add lemon juice and serve. Alternately, combine everything except lemon juice in a pressure cooker. When the jiggler is dancing quite well, put in sink and pour cold water on it. When the valve is down, add lemon juice and serve. Printable version: purple-stew.txt.
