Fruit Squash Delight 2 medium acorn squash 2 medium apples (Gala are good) peeled, cored, cut into 1/2 inch pieces 2 medium pears (Barlett) peeled, cored, cut into 1/2 inch pieces 4 tablespoons margarine or butter (1 Tablespoon per half squash) 4 Tablespoons brown sugar (1 Tablespoon per half squash) cinnamon nutmeg Preheat oven at 350F. Cut medium acorn squash lengthwise in halves. (If it is too hard put in microwave for about 1 minute). Remove stem, seeds and fibers. Place face down on cookie sheet or large casserole dish and bake for 30 minutes. Take out of oven and flip squash to face up. Add 1 Tablespoon margarine and apples then sprinkle with cinnamon. Next add 1/2 Tablespoon brown sugar. Top with pears, the rest of the brown sugar, and sprinkle lightly with nutmeg. Fill the next three squash the same way a little higher than flush with the top of squash. Put back in the oven for 30 more minutes. Makes 4 servings. Maple syrup may be substituted for brown sugar.
