FRUIT AND BEEF CASSEROLE 1 1/2 lb stewing steak grated rind and juice of 1/2 orange 2 Tbsp green beans 1 oz butter or dripping 1 Tbsp lemon juice 1 onion, sliced 1 tsp salt 4 oz fresh or dried apricots 1/4 tsp pepper 1/2 pint water Preheat oven to 350-370 F. Cut steak into 2" strips. Heat butter in a frying pan and fry until meat is brown. Transfer meat and onion to a 2 pint casserole, add beans, apricots, orange and lemon juice, seasoning and water. Mix together thoroughly, cover and cook 1 1/2 hours or until meat is tender. Printable version: fruit-beef.txt.
