New Mexico Corn Casserole 2 eggs 4 cups cream corn (2 cans) 3/4 cup cornmeal 3/4 tsp garlic powder or salt 1/3 tsp sugar 1/2 cup chopped green chile (4oz. can) 1/2 lb grated cheddar cheese Mix all ingredients in large bowl, pour into a greased 2 quart casserole dish. Bake uncovered at 375 degrees for 45 minutes, then reduce oven temperature to 325 degrees and bake an additional 30-45 minutes. Casserole should be browned on top. Printable version: corn01.txt.
