Chicken Spinach Serves 4 2 boneless, skinless chicken breasts, split Stouffer's Spinach Souffle, partially thawed 1/2 cup fresh sliced mushrooms 4 slices Swiss or Provolone cheese Preheat oven to 350 degrees. Pound each chicken piece to flatten a bit. Sprinkle each chicken breast with salt and pepper. Place in glass or metal baking dish. Place mushroom slices on each breast. Divide spinach into four pieces and place one on top of each chicken piece. Cover with a slice of cheese. Bake for 40 minutes. Note: Stouffer's Spinach Souffle is about 2 cups of frozen spinach in a light cream sauce. Printable version: chicken-spinach.txt.
