Golden Carrot Bake 3 cups shredded carrots 2 cups cooked rice 1 1/2 cups shredded cheese 1 1/2 cups milk 2 beaten eggs 2 Tbs. minced onions 1 teasp salt 1/4 teasp pepper 1/2 cup shredded processed cheese Combine carrots, rice, 1 1/2 cups cheese, milk, and eggs: Stir in onion, salt and pepper. Pour mixture into a greased 1 1/2 quart casserole dish. Sprinkle remaining 1/2 cup cheese on top. Bake at 350 degrees for 50-60 min. Yield 6 servings Printable version: carrot-bake.txt.
